Walnut Arugula Pesto
Ingredients:
- 1 cup arugula
- 1/2 cup spinach
- 1/4 cup walnuts
- 2 small garlic cloves
- 1 tsp lemon juice
- 2-3 tbsp cold water
- 2 tbsp olive oil
- salt and pepper
Directions:
- Add all ingredients to a Nutribullet, food processor, or blender.
- Blend well. If you need to, turn off machine and scrap down sides. Blend more.
- If you want the sauce thicker, add a few more walnuts or spinach/arugula.
- Spread on Green Pizza, brown rice pasta, toss on veggies, or where ever else your heart desires.
