Oil-free Vegan Greek Pasta Salad

This extremely simple oil-free Greek pasta salad is a fan favorite in my house. It’s perfect to make in large batches for snacks or a simple lunch or dinner option. I also love bringing it on road trips.

Oil-free Vegan Greek Pasta Salad

Ingredients:

  • 3 cups gluten-free pasta of choice
  • 1/2 cup pitted olives*, chopped
  • 1/2 cup cucumber, diced
  • 1 can artichoke hearts, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup tomatoes, chopped
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1 tbsp apple cider vinegar
  • 1 tsp lemon juice
  • vegan Feta cheese (optional)
  • handful of parsley, chopped (optional)
  • salt and pepper to taste

Directions:

  1. Cook pasta according to package instructions.
  2. While the pasta is cooking, prepare all your veggies.
  3. In a small bowl add apple cider vinegar, dill, oregano, and lemon juice. Whisk until mixed.
  4. When pasta is ready, drain and rise. Add to large bowl and drizzle dressing on top. Crumble in the feta cheese and toss well. Enjoy!

*Note: I used kalamata olives but you can use whatever is your favorite.
