Cauliflower Tacos with Cilantro Sauce

Ingredients:

  • Your favorite tacos
  • 1/2 medium cauliflower*, chopped
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 tbsp lime juice
  • 1 tbsp avocado or olive oil
  • 1 tbsp water

Cilantro Sauce

  • 1 cup cilantro (stems and leaves)
  • 1 tbsp lime juice
  • 1 tbsp tahini
  • 2 tbsp unsweetened plant yogurt
  • 1/4 tsp salt
  • 2 tsp rice vinegar
  • 1 tsp sesame oil

Directions:

  1. Preheat oven to 400º. Line a baking sheet with parchment paper and set aside.
  2. In a small bowl combine cauliflower spices, oil, and water.
  3. Put chopped cauliflower into a large bowl and pour herb blend on top. Toss well until each piece is coated.
  4. Place cauliflower on baking sheet in a single layer and bake for 20-25 minutes or until they reached the desired golden appearance.
  5. While the cauliflower is cooking, add all your cilantro sauce ingredients to a blender and process until smooth.
  6. When the cauliflower is finished, remove from oven and add to your favorite tacos*. Option to garnish with chopped tomatoes, salsa, chopped red onion, and/or avocado.

Notes: *If your cauliflower is on the larger size, use your best judgement on whether to add more spices.

I like to warm my tacos up in a hot pan for a few minutes before adding the cauliflower.
