Cauliflower Tacos with Cilantro Sauce
Ingredients:
- Your favorite tacos
- 1/2 medium cauliflower*, chopped
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1 tbsp lime juice
- 1 tbsp avocado or olive oil
- 1 tbsp water
Cilantro Sauce
- 1 cup cilantro (stems and leaves)
- 1 tbsp lime juice
- 1 tbsp tahini
- 2 tbsp unsweetened plant yogurt
- 1/4 tsp salt
- 2 tsp rice vinegar
- 1 tsp sesame oil
Directions:
- Preheat oven to 400º. Line a baking sheet with parchment paper and set aside.
- In a small bowl combine cauliflower spices, oil, and water.
- Put chopped cauliflower into a large bowl and pour herb blend on top. Toss well until each piece is coated.
- Place cauliflower on baking sheet in a single layer and bake for 20-25 minutes or until they reached the desired golden appearance.
- While the cauliflower is cooking, add all your cilantro sauce ingredients to a blender and process until smooth.
- When the cauliflower is finished, remove from oven and add to your favorite tacos*. Option to garnish with chopped tomatoes, salsa, chopped red onion, and/or avocado.
Notes: *If your cauliflower is on the larger size, use your best judgement on whether to add more spices.
I like to warm my tacos up in a hot pan for a few minutes before adding the cauliflower.
